This Greek-inspired oven roasted chicken recipe uses boneless, skinless chicken thighs marinated in a flavorful Greek yogurt blend and baked to perfection. Part of a dinner spread made using the nutribullet® Ultra+ 3-in-1 Compact Kitchen System.
1. Combine all marinade ingredients in a bowl. Add in chicken thighs and mix well so that they’re all covered. Cover bowl and refrigerate for at least 1 hour (2-4 hours is better if you have time), or make ahead and let marinate overnight.
2. Preheat oven to 450F. Dump chicken along with excess marinate onto a parchment lined sheet pan and spread out (it’s ok if some pieces are overlapping).
3. Bake for about 25-30 minutes. If you’d like you can turn on the Broiler in your oven for the last 5-10 minutes to get a good slight char on the chicken. Just be careful not to burn them too much as some broilers are super hot and can burn your food in minutes. I move my chicken onto the bottom rack and broil on high but I keep a close eye on them. If you have a thermometer, the ideal final internal temperature will be around 185F (165F is the safe fully-cooked temperature, but 185F ensures a better texture with chicken thighs).
4. After baking, allow chicken to rest for at least 10 minutes before slicing into it to avoid drying it out. Enjoy!!!
